Grilled Vegetables and Tofu Kabobs

Grilled Vegetables and Tofu Kabobs

 

  • 1-2 Blocks Extra Firm Tofu (organic and pat dry)
  • 1 Red bell pepper
  • 1 Green bell pepper
  • 3-4 Zucchini
  • 1 package mushrooms of choice
  • 1 carton mini tomatoes
  • Marinade for tofu: 1/2 C Tamari Soy Sauce – wheat free low sodium mixed with 1/4 Cup Avocado oil (or other high smoke point natural oil, 3 cloves crushed mined garlic)
  1. Soak skewers in water. Chop all ingredients into thick and close to equal thickness. Small items like button mushrooms and mini tomatoes can go onto skewers whole. Add marinade to Tofu and let sit at least 2 hours.
  2. Layer ingredients onto skewers and grill approx. 5 minutes on each side, or until cooked to your liking.
