Vegetarian Taco Lettuce Wraps

Vegetarian Taco Lettuce Wraps

  • 2 Tbsp Olive Oil
  • 1 medium onion (cut into slices)
  • 2 garlic cloves (minced)
  • 1 14 oz. can black beans (drained and rinsed (can substitute type of bean: kidney, lima, pinto, etc))
  • 1 14 oz. can diced tomatoes
  • 1/2 tsp cumin powder
  • 2 Tbsp fresh cilantro or 1 Tbsp dry
  • 1 tsp cayenne (red pepper)
  • 1 tsp parsley (dry)
  • 1 tsp black peper
  • 1/2 tsp salt
  • 1 head of lettuce (washed, leaves separated)
  1. Heat olive oil in a large pan and cook onion and garlic until soft.
  2. Add drained black beans and diced tomatoes and heat until bubbling.
  3. Add spices to taste, except cilantro if using fresh, and let simmer for about 5 minutes to let flavors blend.
  4. Add cilantro at last minute so as to not overcook it.
  5. Spoon taco mix into lettuce leaves and enjoy!
