Vegetarian Taco Lettuce Wraps
- 2 Tbsp Olive Oil
- 1 medium onion (cut into slices)
- 2 garlic cloves (minced)
- 1 14 oz. can black beans (drained and rinsed (can substitute type of bean: kidney, lima, pinto, etc))
- 1 14 oz. can diced tomatoes
- 1/2 tsp cumin powder
- 2 Tbsp fresh cilantro or 1 Tbsp dry
- 1 tsp cayenne (red pepper)
- 1 tsp parsley (dry)
- 1 tsp black peper
- 1/2 tsp salt
- 1 head of lettuce (washed, leaves separated)
- Heat olive oil in a large pan and cook onion and garlic until soft.
- Add drained black beans and diced tomatoes and heat until bubbling.
- Add spices to taste, except cilantro if using fresh, and let simmer for about 5 minutes to let flavors blend.
- Add cilantro at last minute so as to not overcook it.
- Spoon taco mix into lettuce leaves and enjoy!
